      <image:caption>I found this heirloom flint corn at Hudson Valley Seed Company, and painted it in watercolor on vellum over panel. It’s long been used as a polenta corn, and I had some cornbread made from it, dried and ground, at the Transylvania School of Botanical Art. It was grown by indigenous people here in the northeastern US for time immemorial. It made its way to Italy in the 19th century and became an important polenta corn. Luckily it is still being grown here in the northeastern US, although it isn’t easy to find. Private collection.</image:caption>
